Why do we bake two or three pizzas at a time?

To ensure a high quality standard of our pizzas, we have decided to accommodate a maximum of three pizzas in the oven at a time. This working method aims to preserve the melt-in-your-mouth texture and taste that characterize our dough, which would be altered if baking more than three pizzas together

Why are there scissors on the table?

Cutting the pizza with scissors rather than with a knife can be considered an act of true “kindness” towards the product: this, in fact, helps to preserve the air pockets created in the crust, a real litmus test of the quality of the work done and the result of the research and application of our pizza chef Ciro Pecoraro.
